Chia and Oat Pudding


This is a super easy, nutritious brekky packed with fibre, healthy fat and protein. Soak the oats and chia overnight and it takes just a couple of minutes in the morning to assemble. The pudding lasts in the fridge for a couple of days.

Feeds 4 people

Ingredients

2/3 cup oats

1/3 cup chia seeds

Almond milk

Granola

Natural yoghurt

Fruit of choice

2 desert spoons of honey

Method

Combine oats and chia in a bowl and add almond milk until the mix is covered by about 2cms. Cover and leave in the fridge overnight. In the morning stir and place in a serving bowl. Top with natural yoghurt, granola and your fruit of choice (berries are our family favourite). Drizzle with the honey to sweeten.
