This is such a quick and easy one for the kids lunch boxes and I guarantee they will love them. I make these on a Sunday afternoon and pop them in the freezer. A food processor with a grating attachment makes this super easy.
Makes 12 muffins

Baking time: 25 minutes
Ingredients
3 medium zucchinis
60g tasty cheese (the cheese makes it tastier for the kids but omit if you prefer dairy free)
4 bacon rashers chopped
1 onion peeled
2 carrots peeled
5 eggs
1/4 cup olive oil
1 cup Paleo flour
1 tsp baking powder
Method
Preheat oven to 180 degrees.
In a food processor with grater attachment grate zucchinis, cheese, onion and carrot. Add to a mixing bowl with olive oil, flour and baking powder. In a separate bowl lightly beat the eggs and add to the mixing bowl, combining well.
Grease 2 x 6 muffin trays and spoon mixture into trays.
Bake for 25mins.
Place on a wire rack to cool.
